Baked Sea Bream
Ingredients
1 x 450g sea bream, scaled and gutted
2 potatoes, peeled and sliced into rounds about 1 cm thick
1 medium red onion roughly chopped
1 red pepper
1 yellow pepper
1 green pepper
2 tomatoes quarterd
A pinch of salt
Ground black pepper
1 teaspoon sugar
2 cloves of garlic, peeled
A small handful of fresh parsley, finely chopped
A few glugs of good olive oil
2 sprigsfresh rosemary
2 sprigs fresh thyme
2 Lemons, for serving
Method
Preheat the oven to its maximum temperature.
Cook the potatoes in boiling water for 3-4 minutes.
Rub the fish with olive oil then lay the fish on a roasting tray and sprinkle with salt and pepper. Place the potatoes, tomatoes, onion, peppersthyme, rosemary and garlic cloves around the fish, and sprinkle with a pinch of sugar and salt.
Pour a few glugs of olive oil into the roasting dish and season the vegetables.
Cover with foil and bake in the preheated oven for 15 minutes, then remove the foil, squirt with juice of lemonand bake for a further 10 minutes.
